Description
Morelli mafalde is a ribbon-shaped pasta with ruffled, frilly edges. The name refers to Princess Mafalda of Savoy who was famous for her curly hair.
Mafalde is a great choice for creamy and chunky sauces. They get trapped in the rippled edges so every mouthful is as delicious as the last. Toss mafalde with ragu alla Bolognese or spicy ‘nduja cream.
Morelli uses an artisan method of reincorporating wheat germ into semolina. It gives their pasta a unique flavour and aroma, similar to toasted wheat.
The pasta is bronze-drawn and dried slowly at low temperatures. This is the secret to the rough surface that helps sauces to cling.
Cooking time: 5-6 minutes.
Store in a cool and dry place, away from cereals.
